Taco Tuesday Casserole

No measuring, no rules, just layer it till it feels right.

What you'll need

  • Ground beef, as much as you want
  • Taco seasoning
  • A can of diced green chilies
  • A can of Rotel (I like the cilantro lime kind)
  • A can of Mexican style corn
  • Enchilada sauce, optional. Sometimes I use it, sometimes I don't
  • A block of cream cheese, optional. If I have it I use it, if I don't I just add a little extra cheese instead
  • Shredded cheese, I use a fiesta blend
  • Flour tortillas
  • Doritos, regular or minis, whatever you've got
  • Sour cream, for serving if you want it

How I make it

    Brown your ground beef and drain it. You don't want all that grease, but if you want to keep a little in there for flavor, that's your call, no rules.

    Dump the taco seasoning, chilies, Rotel, corn, cream cheese if you're using it, and enchilada sauce if you're using it, right into the same pan with the meat. Let it simmer, stir it up, let that cream cheese melt in until everything's mixed together and the seasoning's worked through.

    Now you layer. A little meat mixture on the bottom of your casserole dish, tortillas, more meat, a little cheese, tortillas, meat, cheese, keep going till you run out. I usually land around 3 to 4 layers deep, but that depends on how much meat you made. Maybe you get two, maybe you get five. Cheese on top of your last layer.

    Cover it and bake at 350 for 40 to 60 minutes, depends on the day honestly.

    Pull it out, uncover it, throw the Doritos on top, back in the oven uncovered for another 10 to 15 minutes.

    Take it out and walla. Ready for devouring.

Extra notes

No enchilada sauce? Add a little water so it doesn't dry out.

I always drain my corn. But honestly, if I'm not using water or enchilada sauce, sometimes I'll use the liquid from the corn instead.

Sometimes I skip putting sour cream on top and just mix it right into the meat mixture instead. Your choice, it's your recipe.
